The number of Cape Cod restaurants on the water seems to diminish every year, but since 1984 the Flying Bridge has continued to serve fresh seafood with distinctive local flavors in their unique waterfront setting on Falmouth Harbor.

In 2023 the Flying Bridge changed hands. Following the death of legendary owner/operator William Zammer in 2021, his wife and business partner, Linda Zammer, sold the restaurant to Longfellow Design Build founder Mark R. Bogosian. Mr. Bogosian currently is in the process of transforming this classic Cape favorite into a next-generation restaurant.

Changes to the menu and the kitchen leadership have already created excitement. New executive chef Leon Biscoe began his career under outgoing chef Stuart Cote in 2003. Mr. Briscoe went on to work with numerous award-winning restaurants, and even cooked for celebrities at Madonna’s wedding to Guy Ritchie in Scotland.

Flying Bridge guests can expect their favorite dishes—fried clams, fish and chips, stuffed quahogs and fresh grilled swordfish among them—to remain on the menu.  A few new options, influenced by Mr. Biscoe’s passion for both Italian and Japanese cuisine, have already made it onto the menu, including grilled octopus, seared scallops and premium caviar.

Of the most exciting changes is the new sushi bar. Master sushi chef Wayan, who has a loyal following throughout the southeast Massachusetts coastal community, has created a menu of raw and cooked sushi options that are among the best in the region.

Great food and drinks in a unique location. It’s no wonder the Flying Bridge topped the Best of the Upper Cape once again.
